Lángos (Hungarian Fried Flatbread)
A fragrant, puffy fried flatbread with garlic sauce, sour cream, and cheese. Lángos is Hungarian street food: a fluffy yeast dough fried in oil. It's brushed on top with sour cream alone, or with garlic sauce and sour cream and a sprinkle of cheese. These flatbreads are often called Hungarian pizza, and you'll find them at every fair and festival in Hungary. The dish is said to have come to Hungarian cuisine from Turkey. In Hungarian, "lángos" comes from the word for flame.

Step 1:
The ingredients you'll need for the dough.

Dissolve the yeast in warm milk (about 100 ml), add the sugar and 2–3 tablespoons of flour, and mix well so there are no lumps. Let it sit for 10–15 minutes to activate the yeast.

When a foamy cap forms, the starter is ready!

Add the salt to the starter.

Add the flour a little at a time, working it into a dough, and knead well for about 10 minutes.

Good dough is smooth, even, and elastic, and barely sticks to your hands.

Leave the dough to rise in a warm spot for 30 minutes — it should double in size.

While the dough rises, get everything ready for serving.

Press the garlic.

Add salt and mash the garlic with it so it releases its juice.

Add a little water, mix well, and the garlic sauce is ready.

Grate the hard cheese on the coarse side of a box grater.

Once the dough has risen well, punch it down and knead it a little more.

Divide it into 4 equal pieces.

Stretch each piece into a round about the size of your skillet.

Fry the lángos in a hot skillet in plenty of vegetable oil.

Lángos fries fast — about 1.5–2 minutes per side.

Brush the hot flatbread with the garlic sauce.

Spread on sour cream and sprinkle the top with grated cheese.
