Foil-Baked Stuffed Pork Chops
A wonderful dish for a romantic evening! These foil-baked pork chops with mushrooms and vegetables come out juicy, aromatic, and downright irresistible. Choose lean pork for the chops, and cut the mushrooms on the larger side, since they shrink quite a bit as they cook. Don't skip the water in the baking pan — without that little trick, the meat can scorch.

- Rinse the pork, pat it dry with a paper towel, and cut it into palm-size slabs about 1 inch (3 cm) thick.
- Cover the meat with plastic wrap (so you don't tear the fibers) and pound it with a meat mallet. Each pounded piece should be no more than about 1/3 inch (1 cm) thick.
- Sprinkle the pieces generously with lemon juice, season with ground black pepper and salt, cover with plastic wrap, and let marinate for half an hour.
- Rinse the mushrooms and cut them into large slices. Cut the ham into small pieces. Rinse the tomatoes and cut them into neat cubes. Peel the garlic and slice it thinly.
- Put all the prepared filling ingredients in a bowl, season with salt and pepper to taste, add the thyme, and stir.
- Pour the vegetable oil into a skillet, heat it over high heat, and brown each chop on both sides.
- Cut a piece of foil for each chop. Lay a chop on each piece, top with the filling, and seal tightly.
- Set the packets on a baking sheet, pour in about 1/2 inch (1 cm) of water, and bake in an oven preheated to 350°F (180°C) for 30 minutes.
- Serve piping hot!
