- For these crab stick and cheese egg rolls, be sure to use chilled, unpressed crab sticks so they'll unroll cleanly. If you're using frozen sticks, thaw them completely before unrolling. The key is to buy good cheese and quality mayonnaise, since the flavor of the dish depends a lot on them. All right, let's get started! 1. Crack four eggs into a bowl, salt them lightly, and add a tablespoon each of sour cream and flour. Whisk until smooth. You can use mayonnaise instead of sour cream. 2. Lightly grease a skillet (ideally a crepe pan) with oil and let it heat up. Pour in one portion of the egg mixture and cook it like a crepe on both sides. I got four crepes. Let the egg crepes cool. 3. Very carefully unroll the crab sticks so they open into flat sheets. I needed 4 unrolled sticks — one for each egg crepe. 4. Grate the cheese (any kind; mine was hard) on the fine side of a box grater. 5. Rinse the dill well under running water, pat it dry with a paper towel, and finely chop it. 6. Wrap each egg crepe separately. A bamboo rolling mat (like the kind for sushi rolls) helps here. 7. Lay one crepe on a board (or mat) and brush it with a thin layer of mayonnaise — just enough for the crab sheet to stick — then spread an unrolled crab sheet over it. 8. Sprinkle the crab layer with grated cheese. 9. Brush the cheese with mayonnaise. 10. Scatter chopped dill on top. 11. Very carefully roll it all up into a log. In the end you'll have four crab stick and cheese egg rolls. 12. It's best to chill the finished rolls in the fridge so the filling sets and they slice more easily. Then trim off the ragged ends (you can eat those right away) and cut the rolls into 1-inch (2.5-3 cm) pieces. Enjoy, and happy hosting!
