  • For these crab stick and cheese egg rolls, be sure to use chilled, unpressed crab sticks so they'll unroll cleanly. If you're using frozen sticks, thaw them completely before unrolling. The key is to buy good cheese and quality mayonnaise, since the flavor of the dish depends a lot on them. All right, let's get started! 1. Crack four eggs into a bowl, salt them lightly, and add a tablespoon each of sour cream and flour. Whisk until smooth. You can use mayonnaise instead of sour cream. 2. Lightly grease a skillet (ideally a crepe pan) with oil and let it heat up. Pour in one portion of the egg mixture and cook it like a crepe on both sides. I got four crepes. Let the egg crepes cool. 3. Very carefully unroll the crab sticks so they open into flat sheets. I needed 4 unrolled sticks — one for each egg crepe. 4. Sprinkle the crab layer with grated cheese. 9. Brush the cheese with mayonnaise. 10. Scatter chopped dill on top. 11. Very carefully roll it all up into a log.
