- Cream the sugar with soft butter and add the vanilla sugar. Separate the egg whites from the yolks, and stir the yolks into the butter mixture; chill the whites in the fridge, as cold whites whip up more easily. Add the sour cream and mix. Stir in the sifted flour and baking powder. Whip the egg whites to stiff peaks, fold them into the batter, and combine gently with a spatula. Spread the batter into a 9-inch (24 cm) pan and smooth the top. Arrange peeled, sliced apples over the batter and sprinkle with brown sugar. Bake in a preheated 350°F (180°C) oven for 40–50 minutes, until done. Check with a wooden skewer: if it comes out dry from the center of the pie, it's ready.
