Zucchini and Potato Veggie Fritters

If your garden is overflowing with zucchini, this is the recipe to reach for! My grandmother grows tons of zucchini — we stew it, fry it, pickle it, and give plenty away to friends. One day we were making Belarusian potato pancakes (draniki) and had a bright idea: why not swap in a potato-and-zucchini version? We came up with the recipe ourselves, and the fritters turned out delicious. I'd encourage you to give these zucchini-potato veggie fritters a try. Here's how we make them.

    The ingredients. For these fritters I'd suggest reaching for zucchini rather than a paler summer squash — it gives the batter a pretty greenish color.

    Let's start with the batter. If you have a blender, you're in luck — it comes together in no time. Take the onion, peel it, and cut it into chunks.

    Next, take the zucchini — wash it, peel it, and cut it into pieces.

    Take the potatoes. Wash them and cut into small pieces.

    Put the vegetables in the blender and pulse to a chop.

    Add the egg, flour, a little cornstarch, and a pinch of salt.

    Blend everything together. If you don't have a blender, grate the vegetables on a box grater and then stir them together with the rest of the ingredients.

    Set a skillet over the heat, pour in the vegetable oil, and fry the fritters on both sides until golden.
