Buhlavash (Baked Shawarma-Style Roll)
Make a baked take on shawarma — it's delicious! Buhlavash is a great dish to serve as an appetizer for guests. It's a lot like shawarma, just prepared a little differently: baking gives the roll an appetizing golden crust. You can also serve buhlavash as a main course.

- Wash and peel the carrots and coarsely grate them. 2. Peel the onion and cut it into dice. 3. Heat a skillet with vegetable oil, add the onion and carrot, and fry until the onion turns golden, stirring as you go. 4. Add the ground meat and fry everything together. 5. Season with salt and pepper and stir. 6. Finely chop the dill and parsley, add them to the pan, and stir again. 7. In a bowl, combine the sour cream with the mustard. 8. Spread the lavash out on your work surface — overlap both sheets so you end up with one long roll. If your sheet is large, one will be enough. 9. Coarsely grate the cheese and spread it evenly over the lavash. 10. Spread the hot filling over the cheese. 11. Drizzle half of the sour cream–mustard sauce on top. 12. Roll the lavash up around the filling. 13. Grease a baking dish with vegetable oil and set the roll in it. 14. Brush it with the remaining sauce and bake in an oven preheated to 350°F (180°C) for 25 minutes. Enjoy!
