Salad with Smoked Sausage and Fresh Cucumber

A simple but very juicy, tasty salad with smoked sausage. A fresh-vegetable salad is always a welcome guest at your table. And most often, salads like this can be made for a family dinner or a holiday table alike. Today I suggest trying a very simple salad of cabbage, fresh cucumber, and smoked sausage. This light salad doesn't take much time to make, and the result is a juicy, fragrant, hearty salad.

    Prepare the ingredients for the salad with smoked sausage and fresh cucumber. The sausage can be semi-smoked, smoked, or little sausages like the ones I used. I had one fresh cucumber, which seemed a bit small, so I added another small one. It's better to use young cabbage, but if you can't get any, cabbage from storage will work too. Just a little onion, for a sharp kick. Get a deep bowl ready for the salad.

    Wash the cabbage, remove the outer leaves, and cut it into four parts. A quarter of a head of cabbage (1-1.5 kg) is just the right amount for the salad. Shred the cabbage finely, put it in the salad bowl, salt it, and scrunch it with your hands to release the juices.

    Take the sausage out of its packaging and peel off the casing. Cut it however you like - into matchsticks, half-moons, or rounds. Add it to the cabbage in the bowl. I used these little sausages, but you can use any kind. I've made this salad many times and it goes perfectly with any smoked sausage, even ham.

    Here I'm using a regular onion, but you can use a sweet salad onion or fresh green onion. Peel the onion and slice it thinly. Add it to the bowl with the other prepared ingredients.

    Wash the fresh cucumbers and pat them dry with a towel. Trim the ends and grate them on a coarse grater. Add the grated cucumber to the salad. It's best to add the grated cucumber right before serving, or it will release a lot of juice.

    Add the mayonnaise to the salad and salt to taste, then mix everything thoroughly. Besides mayonnaise, you can use another dressing, such as plain yogurt or sour cream.

    You can serve the salad right away, garnished with fresh dill or parsley. This vitamin-rich salad pairs wonderfully with potato dishes.
