- Rinse the turkey thoroughly under cold running water and pat it completely dry with paper towels. Cut it into medium serving pieces. 2. In a small bowl, stir together the salt, black pepper, and flour. You can add any other dry spices you like. Mix well and pour it into a zip-top bag. Add the cut, well-dried turkey pieces to the same bag and seal it tightly. Shake the bag to coat every piece of turkey in the flour mixture. 3. Heat the olive oil in a large, heavy-bottomed skillet (you can swap in any other vegetable oil). Once the oil is hot, take the turkey out of the bag, shaking off the excess flour and spices, and lay the pieces in the pan. Fry over medium heat until golden, 3–4 minutes. Flip and brown the other side too. Then remove the meat to a plate. 4. Pour the sweet red dessert wine into the same oil the turkey cooked in. Stir it together with the pan drippings and bring to a boil. Lower the heat to medium and cook the sauce for about 10 minutes to cook off the alcohol — the liquid should reduce by half. 5. Return the browned turkey to the pan, spoon the sweet wine sauce over it, cover, and let it simmer for another 2 to 3 minutes. 6. To finish, sprinkle the turkey with grated Parmesan and take the pan off the heat. Let it rest, covered, for a few more minutes, then serve with boiled noodles or any side you like. Enjoy!
