Turkey Fillet in Soy-Orange Marinade, Baked with Oranges

Cooking method

    How do you make turkey fillet in soy-orange marinade? Gather your ingredients. I'm using breast fillet, but thigh fillet works just as well. You can swap the olive oil for any neutral vegetable oil.

    Rinse the turkey fillet and pat it thoroughly dry. Cut it into portion-sized pieces of whatever size you like.

    Lightly pound each piece on both sides with a meat mallet to tenderize the fibers.

    Make the marinade. Wash and dry the orange. Squeeze the juice from half of it — you'll need about 50 ml (a scant ¼ cup).

    In a suitable bowl, combine the soy sauce, orange juice, ground ginger, and paprika. Stir well. If it needs a little salt for your taste, add just a pinch — no more. Keep in mind that soy sauce is already salty. I didn't add any.

    Choose a container that fits the fillet well. Add the turkey pieces and pour the marinade over them. Ideally the marinade should nearly cover the meat so it marinates evenly. Let it sit for 30–40 minutes. If the pieces aren't fully submerged, turn them a couple of times as they marinate.

    Lift the meat out of the marinade onto a plate and let the excess drip off. Heat the olive oil in a skillet. Not sure if the oil is hot enough? Dip in the tip of a wooden spoon — if bubbles gather around it, you're ready to fry. Over medium-high heat, sear the fillet until golden. This locks in the juices so the finished meat stays moist.

    Flip the fillet and sear the other side until golden as well.

    Transfer the fillet pieces to a baking dish. Spoon a little marinade over each one.

    Cut the remaining orange into rounds or half-moons.

    Lay the orange slices over the fillet.

    Bake the turkey in an oven preheated to 350°F (180°C) for 30 minutes. Cooking time can vary, so go by how your own oven runs. You can cover the dish with foil at the start; halfway through, remove the foil and baste the pieces with the remaining marinade as it cooks down.

    Serve the turkey fillet with any side dish or with fresh vegetables. Enjoy!

  • Everyone's palate is different when it comes to salty, sweet, bitter, tangy, and spicy, so always add spices and seasonings to your own taste. If you're using a spice for the first time, remember that some — chili pepper, for example — are especially easy to overdo.
  • Use an oil with a high smoke point for frying. Every oil is only good up to a certain temperature — its smoke point — beyond which it starts to burn and form harmful compounds. Unrefined oils, with few exceptions, have a low smoke point because they still contain unfiltered particles that scorch quickly. Refined oils hold up better to heat. If you're baking, pan-frying, or grilling, reach for a high-smoke-point oil such as refined sunflower, olive, or grapeseed.
