  • Heat the vegetable oil in a skillet over high heat. Add the ground beef and break it up into small crumbles with a wooden spoon or spatula — the finer the crumble, the more tender the finished sauce. If you have a lot of beef or a small pan, brown it in batches so the meat sears instead of steaming. Once all the beef is browned (return the first batch to the pan if you worked in batches), peel and finely dice the onion, add it to the beef, and cook, stirring now and then, until soft and translucent. If a lot of fat has rendered out, tip it off — this dish is meant to be light, so you don't need extra grease in the sauce. Wash and pat dry the zucchini (or use a regular summer squash) and cut it into half-moons, leaving the skin on; cut it smaller if you prefer. Finely mince the garlic and add it to the pan along with the zucchini. Stir well, then add the beef broth, the canned tomatoes with their juice (break up any large pieces first), the bay leaf, salt, ground black pepper, and the dried Italian herbs. Bring to a boil, give it a stir, and lower the heat. Cover and simmer gently for 20 minutes. The zucchini tells you when it's done: as soon as the pieces turn tender, fish out the bay leaf and it's ready to serve. Spoon your side of choice onto the plate — pasta is the perfect match here — top it with a generous ladle of the goulash and vegetables, and serve right away, while it's still hot and the aroma fills the whole house.
