Chicken and Cheese Blintzes
Thin milk crêpes with a hearty, savory filling! These blintzes are so good — my husband couldn't stop praising them. Make the crêpes and filling ahead of time, and breakfast comes together in just minutes.

Step 1:
How do you make chicken and cheese blintzes? Start by gathering your ingredients.

Finely dice the chicken breast.

Fry the chicken in vegetable oil for about 3 minutes. Season with salt, pepper, and turmeric.

Add the finely chopped onion.

Sauté the onion and chicken together until golden.

Pour in the cream and stir. Let it cook down until the liquid has evaporated.

Transfer the filling to a plate and let it cool slightly.

Grate the cheese.

Spoon a little filling onto each crêpe and top with a pinch of cheese.

Roll up the blintzes. Fry them in a mix of vegetable oil and butter until golden.

- Any cheese works here — hard, semi-hard, or soft like mozzarella. Just make sure it's good quality, tastes great, has no milk-fat substitutes, and melts well.
- Keep in mind that every cooking oil is only healthy up to its smoke point. Past that, it starts to burn and can form harmful compounds, so heat it gently and don't let it scorch.
- The right pan matters, too — a poor-quality skillet can ruin even the best recipe, so use a good nonstick or well-seasoned pan.
