Cooking method

    Sift the flour and mix it with the sugar and salt.

    Add the 2 eggs and a few tablespoons of milk, so you get a thick batter.

    Add the rest of the milk a little at a time, whisking the batter until smooth.

    Let the batter rest for about 15 minutes while you make the filling.

    Peel the apples and cut them into medium dice.

    Melt the butter in a skillet and add the apples.

    Cook for a few minutes. Add the cinnamon stick and star anise, the lemon juice, and the sugar, stir, and simmer until the apples are soft (about 7 minutes). If the mixture turns out too runny, add a little cornstarch slurry (I didn't need to). Let the filling cool.

    Stir the melted butter into the crêpe batter and cook thin crêpes.

    Spoon the filling onto each crêpe and fold it into a little envelope. If you like, pan-fry the filled crêpes in butter until crisp, then dust with a mix of powdered sugar and cinnamon. The crêpes are ready — enjoy!
