Step 1:
To start, prepare the dough for pancakes.
Step 2:
To do this, sift the flour and mix with sugar and salt.

Add 2 eggs and a few tablespoons of milk, so that a thick dough would turn out.

Mix the mixture well, you should get a smooth, lump-free dough.
Step 5:
Adding small portions of milk, knead the dough.

We leave the finished dough for 15 minutes to rest, during this time we will prepare the filling.

Peel the apples and cut the mullion into cubes.
Step 9:
Melt butter in a frying pan and add apples.
Step 10:
Fry for a few minutes. Add a stick of cinnamon and star anise, lemon juice and sugar, mix and simmer until the apples are soft (7 minutes). If the mixture turned out to be too liquid, then add a little starch diluted with water (I didn't need it). We leave the filling to cool.
Step 11:
Add melted butter to the pancake batter, mix and fry thin pancakes.
Step 12:
We put the filling on each pancake and wrap it with an envelope. Ready pancakes are fried in butter until crisp (optional), sprinkle with a mixture of powdered sugar and cinnamon. Pancakes are ready! Bon appetit!
