- Rinse and pat the chicken fillet dry, then cut it into medium cubes. Put the meat in a bowl, pour over the rice wine, toss to coat, and let it marinate for 10 minutes. 2. While the chicken marinates, make the batter: mix all the batter ingredients until smooth. Add the fillet cubes and stir so every piece is evenly coated. 3. Make the sweet-and-sour sauce by whisking all its ingredients together until smooth. 4. Peel and finely mince the garlic. Wash the green and red bell peppers, remove the stems and seeds, and cut into squares. Rinse the tomato and cut it into quarters. Slice the green onion into long pieces. 5. Heat the vegetable oil in a wok until good and hot, add the battered fillet pieces, and fry, stirring, until cooked through and golden. Transfer to a paper-towel-lined plate to drain the excess oil. 6. Pour off the oil from the wok, leaving only about 2 tablespoons. Add the garlic and fry, stirring, until light golden, then add the bell peppers and cook until their aroma is bright and fragrant. 7. Pour the sweet-and-sour sauce into the wok and bring to a boil. Add the tomato and the fried chicken, toss everything together for a few seconds, and serve right away. Garnish with chopped green onion. Enjoy!
