Grilled Trout Steaks

A great recipe for cooking trout on the grill or over coals — perfect for a relaxed weekend cookout in the backyard. If you don't have a grill, you can cook the trout right over the coals. This beautiful member of the salmon family has such excellent flavor that it seems made for cooking with a little smoke, and it fits right into any warm-weather menu outdoors.

  • Clean, rinse, and cut the fish into steaks. If the fish is small, you can cook it whole. Rub it all over with the pepper blend and salt, then scatter finely chopped garlic on top and lay lemon slices over it. Let it sit for an hour. On the grill grate, place lemon slices both under and on top of each steak; for a whole fish you can tuck them inside as well. If you don't have a grate, skewers work fine — flat ones are best so the steaks don't spin, and a whole fish can hold several skewers at once. With skewers you won't be able to nestle lemon against the fish on the grill, so baste it with lemon juice while it marinates instead. When grilling, keep the coals at a moderate heat — too hot and you risk scorching or drying out the fish. Cooking time is about 15 minutes. Serve the grilled trout with fresh herbs.
