Korean-Style Tomatoes for Winter, No Sterilizing

A zesty Korean-style preserve well worth making! Korean-style tomatoes are the perfect make-ahead for winter — and beyond! Spicy, with that characteristic kick, the dish goes great with any side and won't look out of place on a holiday table either. It's very simple and quick to make, with no sterilizing at all.   • Wash the tomatoes thoroughly, cut them in half (or into quarters if they're large), and cut out the core. Wash the bell pepper, remove the stem and seeds, and peel the garlic.
  • Grind the peeled bell pepper and chili together with the garlic in a meat grinder. Add the coriander to the mixture, then the sugar and salt, and pour in the vinegar and the oils (vegetable and sesame). Enrich the mixture with spices: ground red pepper, mustard, allspice and hot pepper.
  • Wash the cilantro and parsley, chop them with a knife, and add them to the ground vegetables. Crush the aspirin tablet and add it after the herbs. Mix everything thoroughly.
  • In a one-liter jar, layer the ingredients, alternating tomatoes with the prepared spicy mixture. Close the jar, turn it upside down, set it on a saucer, and refrigerate overnight.
  • Then store it in a dark, cool place.
  • This delicious, zesty preserve will delight you come winter!
