Cottage Cheese Flatbreads with Dill, Parsley, and Onion
Try these amazingly tasty flatbreads stuffed with fresh herbs! These herb-filled chudu are a wonderful addition to a summer menu — thin dough, a generous filling, a golden crust, and nothing "heavy," all light and summery. I love eating them with tea, but they're also great with fresh vegetables or just on their own.

- Make the dough from the listed ingredients by simply mixing them together in a deep bowl. The dough comes out soft and pliable. Let it rest for half an hour.
- While the dough rests, make the filling:
- Herbs: wash the green onion, dill, cilantro, and parsley, let them dry a bit on a towel, then chop them finely and put them in a deep bowl.
- Crack the eggs into the same bowl, add the cottage cheese, season with salt, and mix.
- Chop the white part of the onion into rings, fry it in butter, and add it to the filling bowl.
- Now shape the dough into balls, sizing them so each one rolls out into a thin round 8 to 10 inches (20 to 25 cm) across.
- Roll out a round, spread the filling over half of it, leaving a border around the edge. Fold the other half over the top and press the edges to seal. Make all the chudu the same way.
- Fry the flatbreads in a dry skillet on both sides, then brush them with melted butter. Cut the finished chudu into pieces to make them easier to eat.
