Baked Potato Babka

A great choice for a hearty homemade dinner from simple ingredients! Almost everyone knows draniki (potato pancakes) from Belarusian cuisine, but I'd guess not many people have made babka — a baked grated-potato casserole. That needs fixing right away, because in my opinion it's far easier to make than draniki. And the flavor is really, really interesting. Give it a try!

Cooking method

    Cut the smoked, streaky brisket into cubes.

    Fry in a skillet until some of the fat renders out.

    Coarsely chop the onion.

    Add the onion to the pan and fry until golden.

    You can grate the potatoes and onion on a fine grater, but it's faster and easier with a blender. Cut the potatoes and onion into pieces small enough to fit in the blender jar.

    Blend the potatoes and onion into a smooth purée.

    Here's the smooth mixture you should end up with.

    Season the potato mixture with salt.

    Pour in the milk.

    Meanwhile, the brisket and onion have finished frying.

    Add the fried onion and brisket to the potatoes and mix everything well.

    Spoon the mixture into a baking dish — ideally a cast-iron pot.

    Cover the dish with foil to stand in for a lid, and bake in the oven.

    After 45 minutes, take the potato babka out of the oven and remove the foil (or lift the lid, if you baked it in a pot).
