Pork Pilaf with Onions in a Multicooker

A quick, hearty, delicious pilaf is so easy to make in a multicooker! Ever since a multicooker showed up in my house, there are some dishes I now make only in it — pilaf is one of them. I love how pilaf turns out in a multicooker: it doesn't scorch, the rice stays fluffy and separate, and it's wonderfully aromatic... Just a dream!

Cooking method

    Prep the ingredients you'll need: peel the vegetables and rinse the meat.

    Trim the skin off the fatback and cut it into small cubes.

    Set the multicooker to the "Bake" program for 45 minutes.

    Add the diced fatback to the multicooker bowl.

    Meanwhile, slice the onion into half-moons.

    Cut the carrots into thick matchsticks.

    Pilaf always calls for a generous amount of carrots and onions — don't let that throw you off.

    By the time the vegetables are chopped, the fat has rendered — add the onion and carrots to it. I leave the cracklings in, since I like it that way, but you can fish them out if you prefer. Leave everything on the same setting for 10 minutes.

    Meanwhile, cut up the pork.

    Add the meat to the fried carrots and onions, add the spices, season with salt, and stir. My spices are a ready-made pilaf blend — I bought it at the market and had it mixed fresh in front of me. Leave the zirvak (the meat-and-vegetable base) to cook until the program ends.

    Rinse the rice, rubbing it between your fingers. Change the water 4–5 times, until it runs clear.

    The program has finished — the zirvak is ready.

    Spread the rinsed rice on top.

    Carefully pour in the water so you don't disturb the rice layer. Nestle a whole head of garlic into the rice, first peeling off the outer papery layer.

    Add more salt if needed — rice can take a good amount of it.

    I set the "Rice / Fluffy" program for 30 minutes; on your machine it might be a "Pilaf" program.

    After 30 minutes, the pilaf is nearly done.

    Leave it on "Keep Warm" for another 10 minutes so the pilaf can rest and finish steaming.
