Grilled Zucchini with Olive Oil and Parsley

A crispy take on staying trim. I've been studying good nutrition and healthy living in general for more than 8 years now. I ran into a problem — beauty takes sacrifice. But as it turns out, the only real sacrifice is time. So what do you do when you want to stay slim and have zero time to spend in the kitchen? The answer came with a new grill pan :) With cookware like this, you use a bare minimum of fat while still getting an aromatic, crispy edge and those appetizing char lines on your food. Zucchini deserves a shout-out of its own: it's packed with nutrients, vitamins, and minerals, and its calorie count is lower than you'd ever guess :)

    Rinse the zucchini under running water.

    Cut it into rounds — not too thin, but not too thick either, so the zucchini cooks through inside.

    Quickly season the zucchini with salt and pepper. Work fast — you don't want them to release their juices, which happens in just a couple of minutes.

    Heat the pan as hot as it will go without scorching.

    Brush it with olive oil and lay out the zucchini.

    Grill on both sides until you get those signature golden char lines.

    Garnish with parsley and enjoy on its own or served alongside meat :)
