Lemon Pork Skewers in an Air Fryer

Tender pieces of meat that all but melt in your mouth! This recipe isn't for everyone — not everybody likes lemon. But pork skewers with lemon come out especially delicate. If you don't have an air fryer (aerogrill), you can cook the skewers the usual way: over a charcoal grill or in the oven.

Cooking method

    Here's the short ingredient list. This was my first time making skewers with this recipe, so I scaled the amounts to three servings.

    I cut the meat (pork neck) into pieces of about 80 g (3 oz) and drizzled it with the juice of one small lemon. I worked the meat well with my hands to distribute the juice evenly. The meat must be marinated in a non-reactive container — enamel, glass, or ceramic.

    I grated a quarter of a whole fresh nutmeg on an ordinary fine grater.

    I peeled the onion and sliced it into half-moons.

    I added the onion and nutmeg to the meat and mixed everything thoroughly again. Don't salt it yet. Cover the container with a lid, or seal it with plastic wrap — don't leave the meat in an uncovered dish. Refrigerate for 6–8 hours.

    Then I sliced the second lemon into rounds.

    I picked out the onion — you can toss it, since it's already given the meat its flavor and aroma! Now you can salt the meat and work it with your hands once more.

    I threaded the meat pieces onto pre-soaked wooden skewers, alternating them with lemon slices. I cook these in an air fryer preheated to 375°F (190°C); it takes about 45–50 minutes. You can rest the skewers over a baking dish. During cooking, I turned the skewers 3–4 times so they browned evenly.
