Pancake Cake with Fruit Filling
Perfect for Shrovetide and downright delicious! An easy recipe for a quick pancake cake with an apple-pear filling that will pleasantly surprise you with its flavor and is guaranteed to win over everyone at the table.

Step 1:
Gather all the ingredients for the apple-pear pancake cake, and bake up a batch of pancakes.

Start on the filling. Peel the fruit with a knife, then core it, aiming for about 1 pound (500 g) of peeled fruit total.

Cut the peeled apples and pear into medium dice.

Add the diced fruit to a hot skillet along with 40 grams (about 3 tablespoons) of butter.

Step 5:
Sprinkle about 3 tablespoons of sugar over the fruit in the pan.

Step 6:
Add half a teaspoon of vanilla sugar and half a teaspoon of cinnamon to the pan.

Step 7:
Stir and caramelize the fruit for about 2 minutes, then remove the pan from the heat.

Set out your plate of pre-made pancakes.

Spoon about one tablespoon of the fruit filling onto each pancake.

Fold the filled pancakes to fit the width of your baking dish, then gently roll each one up.

Arrange the pancake rolls in layers in a baking dish greased with a little butter.

Crack 3 room-temperature eggs and separate the whites from the yolks into a deep bowl.

Add a pinch of salt to the egg whites and beat with a mixer until soft peaks form.

Add 100 grams (about 3/4 cup) of powdered sugar to the bowl.

Keep beating the whites with the powdered sugar on the mixer's highest speed until stiff, glossy peaks form.

Drizzle the syrup left over from the fruit over the three layers of pancake rolls.

Spread the meringue evenly over the top of the pancake rolls.

Smooth out the meringue layer and bake in an oven preheated to 350°F (175°C) for 20 minutes.
