Step 1:
Pancakes. To prepare chocolate pancakes-cakes for a cake, we will need: 600 ml milk; 200 g flour; 100 g dark chocolate; 3 eggs; 1 tbsp butter; 1 tbsp sugar and a pinch of salt.
Step 2:
Break the chocolate into small pieces. Put chocolate, butter in a saucepan, pour 250 ml of milk. Put the saucepan on a slow fire and heat the mass, stirring, until the chocolate is completely dissolved.
Step 3:
In a deep bowl, beat the eggs with sugar and salt until fluffy.
Step 4:
Pour in the remaining milk and mix.
Step 5:
Pour in the sifted flour and beat again until smooth.
Step 6:
Pour the chocolate mixture into the dough. Mix it up.
Step 7:
Leave the dough for 25 minutes.
Step 8:
Bake pancakes on both sides in vegetable oil. I baked pancakes in a frying pan with a diameter of 20 cm. So the cake will turn out high. A total of 17 pancakes turned out, of which 2 pancakes were spent on decorating the top of the cake.
Step 9:
To prepare the filling, we will need: 400 g cottage cheese; 100 g fat sour cream (25-30% fat content); 50 g sugar; 1 tbsp vanilla sugar.
Step 10:
Put cottage cheese, sour cream, sugar and vanilla sugar in a blender bowl.
Step 11:
Beat everything in a blender until smooth.
Step 12:
Spread pancakes on a dish with a stack on top of each other, smearing each with cottage cheese filling.
Step 13:
Grease the top and sides of the cake with the remaining cottage cheese.
Step 14:
Roll the pancakes set aside for decoration into tight rolls and cut into circles. Decorate the top of the cake with pancakes, pomegranate seeds and mint leaves. Enjoy your meal!
Pancake cakes are so diverse in composition and taste that when you cook this for the first time, it is difficult to stop at one thing from the abundance of options. I want to cook everything at once.
But in the end I chose this kind of cake made of chocolate pancakes with a light curd layer. You could make custard, and cream of whipped cream, and butter. But cottage cheese seemed to me the most successful for chocolate pancakes - it does not spread, does not melt and has a snow-white color, so the cake will look beautiful in the cut. This combination has fully justified itself.
