Slow Cooker Chicken Cacciatore
Incredibly delicious Italian-style chicken thighs, and one of my husband's all-time favorites. I make a big batch in my slow cooker: we eat half for dinner, and I chill and freeze the other half. A couple of weeks later I thaw it out and give myself a night off from cooking so I can spend the time with my family instead.

Step 1:
Lay the chicken thighs in a hot skillet and season the tops with ground black pepper and all-purpose seasoning to taste. I skip the salt here, since my all-purpose seasoning is already salted.

Sear in butter on both sides until golden brown.

Transfer the seared thighs to the slow cooker.

Step 4:
In the same skillet you used for the chicken, add the chopped onion and cook until golden.

Once the onion is golden, stir in the minced garlic and add the Worcestershire sauce almost right away. Stir everything together for 1–2 minutes, then remove from the heat.

Spoon the onion, garlic, and sauce mixture over the chicken.

Next, chop the bell pepper, broccoli, and carrots and add them to the slow cooker as well.

Add the tomatoes and spoon the tomato paste over the top. You can use fresh tomatoes or ones canned in their own juice, and ketchup works in place of the tomato paste. If you're using pre-salted tomatoes or ketchup, there's no need to add salt. If you're using fresh tomatoes and tomato paste, season with salt to taste.

Step 9:
Set the slow cooker to 355°F (180°C) and let it cook for 2.5 hours. Then stir in the oregano and cook for another 30 minutes.

Chicken cacciatore is great served over pasta or alongside baked or mashed potatoes.
- Chicken cacciatore is an incredibly delicious Italian dish! My husband was the one who first asked me to make it—before that, I'd never even heard of it. Now our whole family is head over heels for it. Serve it with any kind of pasta, potatoes prepared however you like, or a grain such as buckwheat.
