Chicken with Fruit

    1. Make the dressing first. Pour fresh orange and grapefruit juice into a blender, then add the lemon juice, olive oil, and honey. Season with the Dijon mustard and soy sauce. Peel and grate the ginger, and add that pulp to the blender with everything else. Blend on the lowest speed until combined. The dressing is ready! 2. Cook the chicken. Rinse the breasts under running water and pat them dry with paper towels. Rub salt and pepper into all sides. Cook in a skillet or on the grill until done on both sides — about 5 minutes per side. Let the meat rest and cool a little. 3. While the chicken cools, prep the fruit. Peel the orange and separate it into segments, then cut each segment in half. Rinse the strawberries, hull them, and slice each one. Drain the canned pineapple rings and cut each into quarters. Put the blueberries in a colander and rinse under running water, then let them drain for 5 minutes. Rinse and dry the lettuce leaves. Combine all the prepped ingredients in a bowl: orange, strawberries, pineapple, lettuce, and blueberries. 4. Toast the walnuts in a dry skillet or in the oven just until fragrant — only 1–2 minutes. Chop them coarsely and scatter over the fruit mix. Toss, then drizzle with the dressing you made earlier. 5. Slice the chicken breasts. Divide the fruit mix among serving plates and top each with chicken. Serve right away. Enjoy!
