- Start by making a fragrant herb butter — it gives the fish a rich new flavor. Wash the shallots, fresh rosemary, and thyme and chop them fine. Peel the onion and chop it with a knife. 2. Put the prepared ingredients in a blender along with the lemon zest. Salt to taste and add the red pepper flakes (or ground red pepper). Blend everything until smooth. 3. The butter needs to be softened — it's best to take it out of the fridge a couple of hours ahead. Don't use the microwave; it's nearly impossible to get the butter to the right consistency that way. Put the softened butter in a bowl, add the fragrant blend from the blender, and mix thoroughly. 4. Using plastic wrap, shape the herb butter into a log and twist the ends closed. Chill it in the fridge until the butter is completely firm. You can make this butter ahead and keep it on hand — it freezes beautifully, so you can pull it out anytime to use in all sorts of dishes. 5. Rinse the fish steaks and pat them dry with paper towels. Rub each one with olive oil, salt, and pepper. Set them on the grill grate and cook over hot coals for 3–4 minutes per side. In a city apartment, a grill pan works just as well. 6. Arrange the hot steaks on a platter and top each with a slice of the herb butter. The butter melts over the hot fish and fills the room with aroma! Serve the fish with vegetables and fresh herbs, sprinkled with chopped green onion. Enjoy!
