This recipe shares the secrets of cooking dried eggplant, which is every bit as delicious as fresh. Before you cook it, cover it with boiling water and let it stand for 15–20 minutes. 1. Make the sauce: in a small bowl, combine the soy sauce, black bean garlic sauce, rice vinegar, and chili sauce, and add the brown sugar. Stir well. 2. Wash the green beans thoroughly under running water. Trim both ends and cut each pod into two or three pieces. Blanch the beans in boiling water for 4 minutes, then drain and shock them under cold water. The pods should be slightly crisp, not soft. 3. Wash the green onion and chop it fine. Peel the ginger root and grate it on a fine grater. Peel the garlic and push it through a press. Put the dried eggplant in a bowl, cover with boiling water, cover with a lid, and let it stand for 15 minutes, then drain. 4. Heat the peanut oil in a wok. If you don't have one, a large heavy-bottomed skillet works. Stir-fry the eggplant for 6 minutes. 5. Add the ginger and garlic to the eggplant and keep frying until fragrant. After about 5 minutes, add the beans and pour in the sauce. Cook for 3–4 minutes. 6. Divide the vegetables among portions and drizzle with sesame oil. Garnish with chopped green onion and cashews.
