  • Sift the flour into a bowl and add the egg, salt, sugar and butter. Knead into a dough. Form the dough into a ball, wrap it in plastic wrap, and refrigerate for an hour. Take out the dough and roll it out. Cut out circles. Press each circle into a tartlet mold and prick it with a fork in several places. Bake for 20 minutes at 180°C. Now make the mousse: cut up the boiled chicken fillet and put it in a blender. Add the onion powder, cream and curry. Blend until fluffy, then season with salt and pepper. Cut the boiled quail eggs in half, and cut the cherry tomatoes too. Fill the tartlets with the mousse, top with the eggs and tomatoes, and garnish with green onion.
