Rabbit in Creamy Gravy
This dish has a wonderfully delicate flavor and is easy on the stomach. Rabbit is very good for you — one of the leanest, most wholesome meats around, and it won't weigh you down. Serve it with any salad you like; fresh vegetables and tomato juice are ideal.

Step 1:
Gather all the ingredients you'll need.

Rice makes the best side here. Cook it in a small amount of water until fluffy.

Separate the front and hind legs from the rabbit carcass, cut them into pieces, and boil in salted water until done.

Grind the coriander into a fine powder.

Finely chop the dill.

Step 6:
Peel the carrots, cut them into small cubes, and boil them in the same broth the meat cooked in.

Fry the cooked pieces of meat in a skillet with a little vegetable oil.

Pour a little vegetable oil into a pot, toast the flour, then pour in the broth and the cream (or sour cream). Bring to a boil, add the chopped dill, garlic, and ground coriander, salt to taste, stir well, and simmer for about 5 minutes over low heat.

Spread the cooked rice on a wide, flat platter and arrange the pieces of meat and carrots over it. For a prettier presentation, add some lettuce and other greens.

Spoon the creamy gravy over the finished dish and serve. It looks beautiful and appetizing — great for any holiday or occasion.
