  • For the filling, I chop the onion and grate the carrot, then sauté them until soft. I add the ground meat and cook everything together, breaking up any clumps, for another 10 minutes. At the end, I season with salt and ground pepper and stir to combine. I set the filling aside to cool slightly while I make the potato dough. Ahead of time, I boiled the potatoes in their skins, let them cool, and peeled them. I grate them on the coarse side of a box grater, then add the egg, salt, and pepper. I mix in the pre-sifted flour and knead it into a potato dough. I shape the pies, heat plenty of vegetable oil in a skillet, and place the pies seam-side down, frying until golden on both sides.
