Salad with Fried Bacon, Cheese, and Tomatoes
A quick, satisfying little salad with fried bacon and cheese. Tender mozzarella, rich crispy bacon, and fresh greens all get along beautifully here. A drizzle of balsamic ties it together and gives the dish a special zing. This was the salad that first made me appreciate fresh spinach — before, I'd only had it in pesto or braised with vegetables. If you don't have spinach, feel free to swap in arugula. After all, arugula and mozzarella are an Italian classic.
Cooking method

Step 1:
Prepare the ingredients. Take the mozzarella out of its brine. Wash and dry the greens.

Heat 1 tsp of olive oil in a skillet.

Fry the bacon until golden and crisp, then season with pepper. I added a salad seasoning based on lemon zest, sea salt, and a blend of peppercorns.

Step 4:
Transfer to a paper towel to drain the excess fat.

Step 5:
Cut the tomatoes into medium wedges.

Step 6:
Arrange the tomatoes, bacon, mozzarella, and greens on a platter. You can simply toss everything in a salad bowl, or create a pretty arrangement like mine.

Step 7:
Drizzle the remaining olive oil over the top.

Step 8:
Finish with a drizzle of balsamic glaze.
