Step 1:
Pork is better to choose a shoulder blade without a bone or a ham
Step 2:
Peel garlic and onion, cut onion into rings, chop garlic. Squeeze the juice out of the citrus fruits.

Make marinade: combine juice, sugar, garlic, cayenne pepper, oregano. Season with black pepper and salt. Mix it up.
Step 4:

Step 5:
Then reduce the heat to a minimum, pour marinade over the meat, cover with foil and simmer for about 6-7 hours, sometimes pouring marinade over the meat from above.
Step 6:
The meat is ready if it breaks down into fibers when touched.
