Pork Leg in Apple Sauce with Garlic and Cranberries
You have to make this pork leg — it's incredibly delicious! I cook pork leg very often (it's my favorite cut) and always in a new way. Of all my recipes, this is the best. The meat comes out a beautiful golden color with a sweet honey glaze, soaked through with apple juice and honey. The cranberries and rosemary add bright, tart-and-savory notes.

- Rinse the meat, pat it dry, and rub it with salt and pepper.
- Sear the pork in vegetable oil over high heat for 3–4 minutes on each side, until golden.
- Peel the onion and cut it into thick rings. Separate the garlic head into cloves and peel them. Add the onion and garlic to the pan with the pork and cook for a few more minutes.
- Sauce. Stir the apple juice together with the honey and vinegar.
- Pour the sauce into the pan. Simmer for about 5 minutes, turning the pork so it soaks up the apple-honey sauce.
- Transfer the meat and apple gravy to a baking dish, and arrange the onion, garlic, and rosemary sprigs around it.
- Cover the dish with foil and bake in an oven preheated to 350°F (180°C) for 1.5 hours, basting the meat now and then with the sauce from the bottom of the dish.
- Five minutes before it's done, add the cranberries and wait for the berries to burst.
- Slice the finished meat and serve with the sauce.
