Chicken Bombs

Go ahead and serve these to company—they're seriously good! Chicken bombs are a fun little appetizer that works just as well for a party spread as for a family snack. Swap the chicken breast for thighs or leg meat if you like, and season them with your favorite spices. Serve with whatever dipping sauces you love.

    1. Pour the kefir into a bowl, stir in the baking soda, and let it sit for 15 minutes. Add the sunflower oil, mix, then sift in the flour and knead a firm, springy dough. Refrigerate it for 1 hour.
    1. Meanwhile, boil the chicken breast in lightly salted water until cooked through, then chop it with a knife. Transfer to a bowl, season with salt and pepper to taste, and mix.
    1. Cut the mozzarella into small cubes and slice the bacon into thin, long strips.
    1. Once the dough has chilled, divide it into equal pieces and flatten each one into a small round.
    1. Place some chicken and a cube of mozzarella in the center of each round, then lift and pinch the edges shut. Wrap the resulting ball in a strip of bacon and secure it with a wooden toothpick.
    1. Heat the vegetable oil in a deep fryer or other heavy-bottomed pot and fry the bombs until deep golden brown.
    1. Transfer the bombs to a paper towel to drain off the excess oil, then remove the toothpicks.
  • Serve warm.
