Chicken Bombs
Go ahead and serve these to company—they're seriously good! Chicken bombs are a fun little appetizer that works just as well for a party spread as for a family snack. Swap the chicken breast for thighs or leg meat if you like, and season them with your favorite spices. Serve with whatever dipping sauces you love.

- Pour the kefir into a bowl, stir in the baking soda, and let it sit for 15 minutes. Add the sunflower oil, mix, then sift in the flour and knead a firm, springy dough. Refrigerate it for 1 hour.
- Meanwhile, boil the chicken breast in lightly salted water until cooked through, then chop it with a knife. Transfer to a bowl, season with salt and pepper to taste, and mix.
- Cut the mozzarella into small cubes and slice the bacon into thin, long strips.
- Once the dough has chilled, divide it into equal pieces and flatten each one into a small round.
- Place some chicken and a cube of mozzarella in the center of each round, then lift and pinch the edges shut. Wrap the resulting ball in a strip of bacon and secure it with a wooden toothpick.
- Heat the vegetable oil in a deep fryer or other heavy-bottomed pot and fry the bombs until deep golden brown.
- Transfer the bombs to a paper towel to drain off the excess oil, then remove the toothpicks.
- Serve warm.
- Dig in!
