- Make the marinade. Stir together plain and whole-grain mustard and mix in all the spices. Rinse the pork knuckles. Cut the garlic into small pieces, poke slits all over the knuckles, and stuff them with the garlic. Coat the knuckles all over with the marinade and leave them to marinate (the timing is up to you, but the longer, the tastier).
- Wrap each knuckle tightly in two layers of foil so the juices can't escape. Set them on a baking sheet and roast in a 425°F (220°C) oven for 1 hour. Lower the heat to 350°F (180°C) and roast for another 1½ hours. Unwrap the foil and broil for about 15 minutes to brown. That's it. Enjoy!
