- Sort and rinse the woolly milkcap mushrooms, then soak them in salted water for a couple of hours. Drain in a colander and rinse again. (Soaking is important with these mushrooms to remove any bitterness.) 2. In a hot skillet, sauté the finely chopped onion and minced garlic; once the onion turns golden, add the mushrooms and cook for 10 minutes. 3. Separately, fry the chopped chicken breast. Combine everything together. 4. Melt the butter and cook the flour in it, then pour in the broth and milk, whisking out any lumps. Add the mushroom-chicken filling, season with salt and pepper, and cook another 5 minutes. Let the filling cool. 5. Grease a baking dish with vegetable oil. Roll out one sheet of pastry and lay it in the dish. Spread the filling in an even layer and cover with the second sheet of rolled-out puff pastry. Brush with egg yolk and bake in a hot oven for half an hour.
