Skillet Chicken with Onions and Carrots

- Rinse the chicken, cut it into small pieces, and fry in vegetable oil until golden.
- Peel the onion and carrots. Slice the onion into half-moons and cut the carrots into thick matchsticks. Add the vegetables to the chicken, season with salt and pepper to taste, and cook over medium heat until tender.
- Seed and rinse the bell pepper, then cut it into small pieces. Peel and mince the garlic as finely as you can. Add the pepper and garlic to the skillet with everything else and cook until tender, about 7–10 minutes.
- Serve garnished with fresh herbs.
