- First, rinse the chicken feet well and set them in a colander to drain off the excess liquid. Pat them dry with paper towels—they need to be dry, since you'll be frying them. 2. Pour the vegetable oil into a large, heavy-bottomed skillet and let it get good and hot. Add the chicken feet and stir right away. Cook for 5–7 minutes, then pour in the brandy (or use vodka), give the liquid a moment to cook off, and sprinkle in the sugar. Keep frying until golden. 3. Pour the broth (or water) into the skillet, cover, and simmer over low heat for another 10–15 minutes. Let the dish sit, covered, for about 10 minutes so it soaks up the sauce, then serve.
