Lacy Hot-Milk Crêpes

- In a deep bowl, pour a little of the milk (about 50 ml / 3–4 tablespoons), crack in the eggs, and add the sugar and salt.
- Whisk the mixture until smooth, then pour in the vegetable oil and whisk again.
- Sift the flour into the mixture and whisk the batter until there are no lumps.
- Heat the remaining milk in the microwave (or on the stove) until very hot, but don't let it boil.
- Very carefully, pour the hot milk into the batter in a thin stream while beating continuously with a mixer.
- Now put the baking soda in a cup, add a little boiling water (a tablespoon is plenty), stir, and mix it into the batter.
- Cook the crêpes in a nonstick skillet (otherwise you'll need to keep re-oiling the pan, which a nonstick one doesn't require) until golden on both sides. They cook very fast, so don't step away from the stove :)
- Serve with fruit sauce, sweetened condensed milk, honey, sour cream, or your favorite jam. Enjoy!
