Lacy Hot-Milk Crêpes

These crêpes will win you over with their appetizing look and delicate flavor! Lacy hot-milk crêpes aren't just for Maslenitsa (Pancake Week)—they make a wonderful pairing with a cup of tea or milk. It's best to cook them in a nonstick skillet so you don't need extra oil.

    1. In a deep bowl, pour a little of the milk (about 50 ml / 3–4 tablespoons), crack in the eggs, and add the sugar and salt.
    1. Whisk the mixture until smooth, then pour in the vegetable oil and whisk again.
    1. Sift the flour into the mixture and whisk the batter until there are no lumps.
    1. Heat the remaining milk in the microwave (or on the stove) until very hot, but don't let it boil.
    1. Very carefully, pour the hot milk into the batter in a thin stream while beating continuously with a mixer.
    1. Now put the baking soda in a cup, add a little boiling water (a tablespoon is plenty), stir, and mix it into the batter.
    1. Cook the crêpes in a nonstick skillet (otherwise you'll need to keep re-oiling the pan, which a nonstick one doesn't require) until golden on both sides. They cook very fast, so don't step away from the stove :)
  • Serve with fruit sauce, sweetened condensed milk, honey, sour cream, or your favorite jam. Enjoy!
