  • Pour the kefir into a bowl, add the eggs, salt, sugar, and baking soda, and whisk everything well. Add the flour gradually, mixing it into the batter as you go—you may need a little more or less depending on the fat content of the kefir and the quality of the flour. The batter should have the consistency of thick sour cream. Then bring the milk to a boil and pour it into the batter in a thin stream, stirring vigorously. You'll end up with a batter about as thick as ryazhenka (fermented baked milk), dotted with tiny bubbles. Stir in the sunflower oil, then cook the crêpes.
