Fried Potatoes with Frozen Honey Mushrooms

A terrific dinner—tasty, filling, and easy on the wallet! My husband adores fried potatoes, and while I'm watching what I eat, I let myself have a small serving now and then. Today I found some honey mushrooms in the freezer and decided to make fried potatoes with them. It turned out so good that I couldn't help going back for more.

    1. Thaw the honey mushrooms and pat them dry on a paper towel.
    1. Peel and rinse the potatoes, then cut them into matchsticks.
    1. Peel the onion and slice it into half-moons (or quarter-moons if the onion is large).
    1. Heat the ghee in a skillet, add the potatoes, and fry over medium heat until half done.
    1. Add the onion and honey mushrooms, season with salt and pepper, and fry for about 15 minutes more.
    1. Rinse the parsley and chop it.
  • Divide the potatoes among plates, sprinkle with chopped parsley, and serve.
