Fried Potatoes with Frozen Honey Mushrooms
A terrific dinner—tasty, filling, and easy on the wallet! My husband adores fried potatoes, and while I'm watching what I eat, I let myself have a small serving now and then. Today I found some honey mushrooms in the freezer and decided to make fried potatoes with them. It turned out so good that I couldn't help going back for more.

- Thaw the honey mushrooms and pat them dry on a paper towel.
- Peel and rinse the potatoes, then cut them into matchsticks.
- Peel the onion and slice it into half-moons (or quarter-moons if the onion is large).
- Heat the ghee in a skillet, add the potatoes, and fry over medium heat until half done.
- Add the onion and honey mushrooms, season with salt and pepper, and fry for about 15 minutes more.
- Rinse the parsley and chop it.
- Divide the potatoes among plates, sprinkle with chopped parsley, and serve.
