Baked Stuffed Potatoes with Mushrooms
A fragrant dish of potatoes and mushrooms — well worth a try! Who doesn't love baked potatoes? I'd guess very few of us. I want to share a recipe for a wonderful dish you can serve as a warm appetizer or enjoy as an afternoon snack.

- Wash the potatoes, pat them dry, and wrap each one in foil.
- Place the packets on a baking sheet and bake in an oven preheated to 425°F (220°C) for one hour.
- Meanwhile, wash the mushrooms, dry them on a paper towel, and slice them thinly.
- Peel the onion and cut it into small cubes.
- Sauté the mushrooms with the onion in vegetable oil until soft.
- Peel the garlic and press it in, then add the sour cream, and season with salt and pepper to taste.
- Grate the cheese and stir it into the skillet after the sour cream.
- Take the potatoes out of the oven, open the foil, cut a deep slit across the top, and fill each potato with the mushroom mixture. Serve right away!
