Thin Ryazhenka Crepes with Boiling Water

The whole family will love these crepes — you've got to make them! The first time I tried making crepes with ryazhenka (fermented baked milk), I realized they were the tastiest of all. Now I'm making up for lost time and mix my batter only this way!

  • These crepes are very easy to make:
    • crack the eggs into a bowl, add the sugar and baking soda, and mix with a tablespoon;
    • add the ryazhenka, stir, and let it stand for 5 minutes;
    • pour the boiling water into the mixture and stir quickly;
    • sift in the flour, add the salt, and mix the batter until smooth and lump-free;
    • pour in the vegetable oil, mix again, and chill the bowl in the refrigerator for 30 minutes;
    • ladle the batter onto a preheated skillet and cook until lightly golden on both sides;
    • serve the crepes warm with your favorite jam, honey, or condensed milk — either way, they'll be delicious!
