Mixed Crepes with Milk, Kefir, and Sparkling Water

Tender, full of little holes, with a pleasant tang! Kefir crepes have a lot of fans, thanks to their distinctive flavor. These crepes aren't especially thin, but they're easy to stuff — or serve as is, with sour cream or condensed milk. They're wonderfully versatile: sweet-tooths love them, and so do those who prefer a bit of tang. That's exactly why we love them, since everyone in the family has different tastes. And like all milk-based crepes, they come together quickly enough to please anyone!

Cooking method

    Gather your ingredients — everything should be at room temperature.

    Add the sugar and salt to the egg and stir.

    Pour in half of the warm milk and beat with a mixer.

    Add all the sifted flour and stir, gradually pouring in the rest of the milk so no lumps form.

    Stir the baking soda into the warm kefir (it activates in it), then pour it gradually into the batter, mixing well.

    Add a little sparkling water to bring the batter to the right consistency. Finally, pour in the melted, slightly cooled butter. Let the batter rest for about 10 minutes.

    Cook as usual, lightly greasing the pan every other crepe — that's what gives them their lacy pattern. Serve with whatever you like. Enjoy your meal!
