Custard Kefir Crepes with Oil and Boiling Water

These fragrant crepes are just the thing with a cup of tea! Kefir crepes come out soft, tender, and aromatic. I love crepes in general because you don't have to knead the dough by hand — just 15 minutes with a whisk and voilà! Definitely make these; you won't regret it!

    1. Crack the eggs into a bowl, add the sugar and salt, and whisk to a light foam.
    1. Then, without stopping, pour the boiling water into the egg mixture in a thin stream while whisking.
    1. Add the kefir next, then sift in the flour and baking soda.
    1. Mix the batter until it's smooth and lump-free.
    1. Stir the vegetable oil into the finished batter, then let it rest at room temperature for 15 minutes.
    1. Cook the crepes in a dry skillet — just grease the pan lightly with a little oil before the first crepe.
