- Crack the eggs into a bowl, add the sugar and salt, and whisk to a light foam.
- Then, without stopping, pour the boiling water into the egg mixture in a thin stream while whisking.
- Add the kefir next, then sift in the flour and baking soda.
- Mix the batter until it's smooth and lump-free.
- Stir the vegetable oil into the finished batter, then let it rest at room temperature for 15 minutes.
- Cook the crepes in a dry skillet — just grease the pan lightly with a little oil before the first crepe.
