Pork and Vegetables in Sweet and Sour Sauce

- Rinse and pat the pork dry, then cut it into strips. Put the meat in a bowl, add half of the starch, pour in the soy sauce (about 2 tbsp — save the rest for later) and 100 ml of water, mix, and leave to marinate (15 minutes is enough).
- Peel the carrots and grate them on a julienne (Korean-style) grater. Peel the onion and cut it into half-rings. Seed and core the bell pepper, wash it, and cut it into strips.
- Fry the meat in vegetable oil on all sides (you won't fit it all at once, so work in batches).
- In the remaining oil, sauté the carrots; after a minute, add the pepper and onion and simmer over medium heat for 5 minutes, then salt to taste.
- Put the tomato paste in a bowl, add the remaining soy sauce and the vinegar, then add the grated peeled ginger and the pressed garlic, and mix well. Stir the sugar into the sauce, then add the last 100 ml of water with the remaining starch dissolved in it.
- Pour the sauce into the pan with the vegetables, bring to a boil, and add the meat. Simmer for 5 minutes.
- Serve the dish sprinkled with sesame seeds and garnished with fresh herbs.
