Lazy Belyashi (Fried Meat Patties) with Onions

A hearty dinner with no fuss — cook it and enjoy! When belyashi are on the menu, I don't have to call anyone twice; everyone's right there, waiting for me to serve. It's a good dish — quick to make, no kneading by hand, and if you've already got the ground meat ready, even better! Give it a try, your family will love it!

    1. Rinse the meat and run it through a meat grinder (use the fine plate). Peel the onion and chop it as fine as possible (a blender or grater works best). In a deep bowl, combine the ground meat with the onion, add the pressed garlic and the finely chopped parsley. Mix everything thoroughly, seasoning with salt and pepper. Shape the mixture into small flat patties.
    1. In a deep bowl, combine the kefir and baking soda and let it sit a minute or two for the reaction to happen. Then crack in the egg, add the salt and sugar, whisk the mixture, and sift in the flour. A mixer makes quick work of the batter, but a whisk works too — it just takes longer. The batter should be like pancake batter, maybe a touch thicker.
    1. Set a skillet over the heat and add the vegetable oil. Using a tablespoon, drop small rounds of batter onto the hot skillet, set a patty in the center of each, and cover it with a little more batter. Fry over low heat for 5 minutes per side (higher heat will burn the batter while leaving the meat underdone).
  • Serve the belyashi hot, garnished with a sprig of fresh herbs.
