Lazy Zucchini Belyashi (Fried Patties)
Super-tender belyashi made from zucchini batter — finger-licking good! This dish delights me; something this tasty yet this simple doesn't come along often. Zucchini belyashi with ground chicken are just scrumptious! My kids eat them with great pleasure, and my husband can't keep up with them!

- Wash the zucchini and peel it (if it's very young, there's no need to peel), then grate it on a coarse grater. Let the zucchini sit for 5 minutes, then squeeze out the released juice.
- Season the mixture with salt, crack in the eggs, add the baking soda slaked with vinegar, and add the flour. Knead a thick batter, thicker than pancake batter.
- Peel the onion, chop it with a sharp knife, and combine it with the ground chicken; season with salt and mix.
- Add vegetable oil to a well-heated skillet, spoon on the zucchini batter with a tablespoon, top with a little filling (1-1.5 teaspoons), then cover again with a thin layer of batter (too much and the patty won't cook through and will stay raw inside).
- Fry on one side for 4 minutes, then flip, cover the pan with a lid, and cook another 3 minutes. Remove the lid and let the patties brown for a minute.
- Transfer the finished belyashi to a deep dish, cover with a lid, and let them rest for 15 minutes.
