- To make this really tasty dish, rinse the chicken breasts and slice them in half. Pat them dry — there shouldn't be any excess moisture on the meat. 2. Add salt and whatever spices you like. For extra juiciness, add the soy sauce. 3. Coat each piece in the beaten egg and then in the breadcrumbs. 4. Once the pan is nice and hot, pour in the oil and fry the cutlets. As soon as the crust turns golden, flip them right away. Chicken is delicate and doesn't need long to cook.
