Whey Crêpes with Butter

Soft, tender, melt-in-your-mouth crêpes with a buttery flavor. This recipe came to me from my grandmother. She taught me to cook them in an old heavy-bottomed pan. You can make the crêpes to your liking by adding more or less flour — they come out thin, or fluffier if you prefer. Make a batch of these delicious crêpes and treat your family!

    1. Beat the eggs with the sugar until you have a stable, stiff foam. 2. Add the whey (at room temperature), the melted butter, and the salt. 3. Sift in the flour a little at a time, whisking well until all the lumps are gone. 4. Slake the baking soda in the vinegar and add it to the batter. Stir everything once more. Let it rest for 15–20 minutes, until bubbles appear on the surface — those become the little holes in the crêpes. 5. Heat the pan and brush it with vegetable oil. Pour the batter into the pan in small amounts and cook.
