Perepechi with Meat

Tender, tasty little meat pies with an intriguing name! The dough for perepechi is usually made with milk cut with water. As always, I couldn't resist experimenting, so I tried making them with sour cream instead. The dough is different both to work with and once baked — softer, not the least bit tough. Give this Udmurt dish a try; you'll love it.

  • Make the filling first so it has time to cool before you shape the pies: peel and dice the onion, put it in a skillet, and add the vegetable oil; add the ground pork, pour in the water, and cook the pork and onion together for 10–12 minutes; season with salt and pepper to taste, stir, and set aside to cool. Now make the dough: pour the milk into a bowl, add the sour cream and the egg yolk, and stir; work in the flour and salt and knead into a soft, elastic dough. Divide the dough into 12 pieces and roll each into a round about 5–5 1/2 inches (12–14 cm) across; pinch up the edges to form a little rim, like a shallow tart shell. Set the shells on a parchment-lined baking sheet and fill each with the cooled meat (about 1 tablespoon per shell). Crack the egg into a separate bowl, add the milk, and beat lightly with a whisk. Spoon this mixture over the filling, about 2 tablespoons per pie. Bake for 15–20 minutes in an oven preheated to 350°F (180°C). Look how golden they come out! Enjoy!
